I really like chicken…it can take flavours excellently, you can do a million things with it, it is healthy and when the skin is removed it is virtually fat-free.

I would say my most favourite chicken dish ever is Captain’s Chicken. It is positively delicious. It is something you will probably never find in any European restaurant as it is a typical dish of the southern parts of the USA.

Its relatively easy to make. Cube up some chicken breast, put it in a plastic bag, add about 4 tablespoons of flour mixed with salt, pepper and paprika and shake it about until the chicken is coated. Then cook the chicken in some good quality butter, add some onions, green pepper and garlic, 3 teaspoons curry powder and 1/2 a teaspoon of thyme. You can use the dried stuff you find in those little jars, but I used 2 sprigs from my herb garden and it truly made a difference. Blend some tomatoes into a puree and add to the pan. Then transfer to a casserole dish with a lid and put in the oven at 200 fan assisted for 40 mins. Top it with some roast almonds and sultanas, or if you do not like sultanas and want a variation, chop up some dried apricot. Serve with some long grain rice, it is really tasty.
